A twist on the classic Masala Chai blend. We mix the leaves with spices like cinnamon, cardamom, cloves and star anise, then infuse with toffee-ish caramel. The end result? A spicy, creamy chai with just the right amount of sweetness. In fact you shouldn’t need to add additional honey: the natural caramel gives a sugary zing, and you can really taste the malty mid-tones. To serve, just pour over 250ml of hot milk (full cream tastes great, but you could use soy or almond) and steep for two minutes. Pure bliss.

Add 1-2 teaspoons to 250ml of hot milk and steep for 2 minutes.
Strain and serve, or chill over ice.
Sweeten with honey to taste.
